Sometimes a recipe arrives, imposing and confident, and you don't change a thing. Sometimes it's a long journey: from a cooked fish that was a red mullet in a cotriade stew, I ended up with a raw fish that became a sardine... What will it be tomorrow?

  • 15 to 20 sardines, scaled and gutted
  • 25 cl rice vinegar - 2 tablespoons olive oil
  • 1 large tomato, peeled and seeded
  • 4 shallots, minced and blanched
  • 2 Granny Smith apples
  • 100 g of cottage cheese
  • Mesclun salad mix - Fresh wasabi - Sea salt - Black pepper
